Ingredients (Serves 2)

  • 6 fresh figs
  • 1 log soft goat’s cheese (or a soft cow’s milk cheese)
  • A handful of rocket and spinach
  • Serrano ham
  • 50g walnuts

Dressing

  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar

Method

Start by roughly chopping the walnuts. Place them into a dry frying pan over medium heat and toss them regularly until lightly toasted. They’ll darken slightly and smell wonderfully nutty — just keep an eye on them so they don’t burn.

For the dressing, combine the honey, olive oil and balsamic vinegar. I usually add everything to a small jar with a lid and shake it until combined.

Arrange the rocket and spinach on a large serving plate or bowl. Add the figs, torn goat’s cheese and Serrano ham, then scatter over the toasted walnuts. Finish with a generous drizzle of the dressing.

Serve immediately while everything is fresh and vibrant.

Make It Your Own

This salad is incredibly adaptable.

If you’d prefer a vegetarian version, roasted chickpeas work brilliantly in place of the Serrano ham. You still get that salty crunch and satisfying texture. You could also swap the goat’s cheese for burrata, feta or a soft cow’s milk cheese depending on what you have.
